Funfetti Vanilla Bean Sugar Cookie Bars
Ingredients
- 3/4 cup salted butter, softened
- 2 cups granulated sugar
- 1/4 cup plain yogurt
- 5 cups all-purpose flour
- 1/2 tsp baking soda
- 4 large eggs
- 2 tsp vanilla extract
- 1 medium vanilla bean, split lengthwise and seeds scraped out
- 3 Tbsp sprinkles
Instructions
- Preheat the oven to 350˚F. Line a 19x13 inch baking pan and a 8 inch square baking pan. Set aside.
- In the bowl of a stand mixer, cream together the butter, sugar and yogurt until light and fluffy. Mix in the vanilla extract and vanilla bean seeds.
- In a seperate bowl, mix together the flour, baking soda and sprinkles.
- Slowly mix in the dry ingredients into the wet ingredients until just combined.
- Press the batter into the prepared baking pans and bake in the preheated oven for 15-20 minutes, or until a toothpick inserted comes out clean. Allow to cool completely in the pan before cutting into squares.
