Chicken And Vegetable Sheet Pan Meal Prep Recipe
When I saw this sheet pan meal prep idea, I knew I had to make it because the one thing that keeps many of us from eating as healthily as we would like to is time. Time plays a huge role in the decisions we make on all levels and we’ve all had very noble intentions with a clear resolve to eat more healthy and make better choices, only to let it all fly out the window because we have let ourselves get too hungry and we go into the kitchen grasping for the first thing we see. There is an answer, it’s called meal prepping, and follow along because you are not going to believe how easy and simple meal prepping can make your life. These lovely pre-made meals can be stored in the fridge for the entire week or in the freezer indefinitely and I guarantee you won’t be running into the kitchen starving to death grabbing chips and crackers. The meals are also excellent to take to work or to any place you may need a quick pick me up before your blood sugar gets low.
Ingredients:
- 1 Red Pepper (sliced)
- 1 Yellow pepper (sliced)
- 1 Small Red Onion (sliced)
- 2 Boneless Skinless Chicken Breasts
- 3 Carrots (sliced on the bias)
- 1 cup Broccoli Florets
- 1 cup Snow Peas
- 1 can Black Beans (drained and rinsed)
- 4 cups Cooked Rice (Brown or White)
Chipolte Lime Sauce:
- 1/2 cup Olive Oil
- 1/2 cup Lime Juice
- 1/2 cup Honey
- 1 Tbsp chopped Garlic
- 1 tsp Chipotle Powder
- 1 tsp Cumin Powder
- Salt and Pepper (to taste)
Teriyaki Sauce:
- 1 cup Soy Sauce
- 1/2 cup Honey
- 1 Tbsp Fresh Ginger (minced)
- 1 Tbsp Fresh Garlic (minced)
- 1 Tbsp Sesame Oil
Directions:
Preheat oven to 425 Degrees and then line your baking sheet with parchment paper then spray with cooking spray (or use butter). Then place all your cut vegetables and chicken on the tray and the sauce of your choice (either Teriayiki or the Chipotle Lime and cook for 20 – 25 minutes.
When your meal is done separate into containers and store for later.
You can also put in a little container for your leftover sauce (gravy)
These individual meals are mighty in their power to fill you up and keep you from running on empty calories, not to mention they taste great.
