Chicken Tongseng


Ingredients


  • 500 gr chicken fillets (diced) / can use other parts of the chicken
  • 200 gr cabbage (400gr original recipe), sliced
  • 2 scallions, sliced
  • 1 tomato, sliced
  • Whole raw
  • 1 lemongrass stalk, geprek
  • 2 bay leaves
  • 3 pieces of orange leaf
  • 1 galangal segment, geprek
  • 3 tablespoons soy sauce
  • 1200 ml of water


Ground spices :


  • 10 cloves of shallot
  • 5 cloves of garlic
  • 5 grains of hazelnut
  • 1 tablespoon coriander powder
  • 1 teaspoon ground pepper
  • 1 teaspoon turmeric powder
  • to taste brown sugar
  • Salt / flavoring





Instructions



  1. Fried chicken until cooked, but do not dry, lift, drain. (This part may be skip, so the chicken doesn't need to be fried)
  2. Heat oil, then saute ground spices, add Salam leaves, orange leaves, galangal, lemongrass. Cook the spices until cooked.
  3. Add chicken, stir until smooth. Add water. Let the water shrink a little.
  4. Add cayenne pepper, then add soy sauce. Stir well. Add cabbage and tomatoes. Cook until boiling.
  5. Finally add the leeks, stir briefly, then turn off the heat. Ready to be served.
