Honey Mustard Meatloaf Recipe
Meatloaf is my favorite comfort food in the world and I have been stuck making the Cracker Barrel Copycat Meatloaf for a while, so when I saw this recipe for Honey Mustard Meatloaf, I knew it was time for a change. I couldn’t wait to try it with the freshly ground brisket I got from our local meat market yesterday. The ingredients are super simple and basic things most of you already have.
Ingredients:
- 2 pounds lean ground beef
- 1 small finely diced onion
- Small Stalk of Celery (minced)
- 1 Small Carrot (minced)
- 1/2 cup finely diced bell pepper – optional
- 1/2 cup finely chopped breadcrumbs
- 1/2 cup French’s Honey Mustard Dipping Sauce (divided into 2 portions: 1/4 and 1/4 cups)
- 1/4 cup freshly chopped parsley
- 2 large eggs
- 1/2 tsp Garlic Powder
- 1 tsp Worcestershire Sauce
- 12 to 14 slices of thinly sliced bacon
- 1 tsp. salt
- 1/4 tsp. black pepper
Directions:
Mix above ingredients well Preheat oven 350 degrees F In a large bowl mix the eggs, breadcrumbs, onion, bell pepper, carrot, celery, 1/4 cup French’s Honey Mustard Sauce, salt, and black pepper in a mixing bowl and fold ingredients together making a loaf shape.
Place meatloaf on foil or parchment paper-lined baking sheet/pan. Form into a loaf., then weave 6 slices of bacon across the top and 6 slices underneath your glorious French’s Honey Mustard Meatloaf and then bake your loaf at 375 degrees for 1 hour and 20 minutes (glazing with your remaining honey mustard (1/4 cup every 20 minutes or so) If your bacon is cooking too quickly cover it with a bit of foil.
Remove from oven and spread and brush on more of the Honey Mustard the topping. Bake for an additional 30-40 minutes or until the center is 160 degrees F. Remove from oven and let stand for 15 minutes before slicing and serving. Enjoy.
